Norwegian Cooking by Enid Cleaves. The book contains ethnic recipes, anecdotes, cartoons, a bit of history…and even a (clean) Ole and Lena joke or two. Kind of country, and sort of old fashioned, but gooder ‘n all get out.
As an editor, I very rarely intrude into the design of the book, other than with technical fix-its. Working with this cookbook, however, compels me to share some thoughts with the reader.
Until editing this book, I had all but forgotten Mother’s creations in the kitchen of our second generation Norwegian home of so many years ago. The lutefisk, the lefse, the Julebake, and the pickled herring have somehow slipped away. The fruit suppe and the cabbage rolls have, in the busyness of all those years, sort of faded into the past.
I realize now how much I have lost and am certainly expecting to recover some of that as I use this cookbook in our own kitchen.
