Also to attain the authenticity of the style and flavor of the Philippine cuisine, some ingredients were substituted, omitted, or added. Therefore because of the availability of the ingredients, one item was replaced with another which is close in color and flavor. Also for the kara-kara, instead of using banana blossoms, I have used artichoke. The artichoke has a better appearance in presentation of the dish and also has a flavor and texture close to banana blossoms. Therefore this is very appealing and appetizing to a Western palate.
